The Ancestral Method, sparkling wine comes from
only one grape variety: Mauzac.
TERROIR
Vineyard of about 25 years old, cultivated on claylimestone soils.
VINIFICATION
In the last century, three appellations from the south of
France, Clairette de Die, Blanquette de Limoux and
Mousseux de Gaillac, were great success because
the ancestral method,100% natural, left intact
bouquets of our grape varieties. However, the natural
yeasts used being very independent, it happened
occasionally that there was no foam or that the
pressure was uncontrollable.
Today, the control of the temperatures in our cellars
allows us to elaborate a wine of the past with today’s
reliability.
PRODUCT OF FRANCE
CHAMPAGNE QUALITY TASTING
It is a wine of a pole yellow color, with long and fine
bubbles, a very aromatic nose, aromas of apple and
pear.
TASTE AGREEMENTS
The “Méthode Ancestrale” is served as an aperitif or
dessert at about 7°C
